I have a question about transfers. I'm going to be switching my domain to a new server, but I won't be able to access both servers at the same time.
This brings me the problem of having both the new and old FTP information working. Would it be possible for you guys to back everything up and then
let me point the domain to the new server so you guys could transfer everything over?

Because once I point my domain to the new server, everything on the old server will become inaccessable. Unless I'm missing something and there's a
way?

When you make a domain transfer it can take anywhere from 24 to 72 hours for the domain name to propogate around the world's servers. So what would
need to be done is to submit a transfer requests and supply the old server info with the domain name and the new server with the IP address. This way
both servers can be accessed. And you should wait until everything is set up on the new server and the domain name has propogated before shutting of
the old server.
